Mead is delicious, so yes, I do drink it, but you will be considered some sort of pretentious asshole by most when you ask for it.

I tried to make meat 3 times.
They always end up tasting like a mix of champagne and vinegar. Not even sure if I am fucking things up...

All my other fermentation projects have been successful.

Mead is pretty good. I prefer red wine however. Only spirit I like is tequila.

Are you adding enough nootrients?

Yes, it is not very common but it's getting more popular as the "muh local microbrews" culture gets bigger, also lots of people like it for being a gluten-free beer alternative. One of the Zach and Cody kids now makes mead.

You should try Chilean pisco. It's a strong spirit made of fermented grapes.
Here in Brazil we call it "Graspa" or "Grappa" (if you are Italian) but it doesn't taste the same.

One time I add too much yeast, so it tasted like shit. Then I add very low and it turned out ok, then I did another batch without any yeast and it also fermented fine, but the taste just is not there.

If you're not adding extra nutrients then it's going to take many years for the taste to come

Well, it does hit you in the face but leaves a grape taste after it burns.

And yeah, it was used to sterilize medical instruments for a long time...

What nutrients? I was doing just honey and water...
