One word: emotional investment.
You still have legions of boomers with disposable income that have spent decades dumping untold thousands of dollars and incalculable time and effort into their "Star Wars fan" status. They're die-hards. They are the #1 target of Disney's fear and loathing and will also be the last to fall. Disney will literally burn through all the casuals and normies, alienating basically everyone, before they are able to completely demoralize and defeat the "super fan."
You have to understand how bizarre and scary actual fandom is to corporations. It just seems like some kind of weird cult that they don't quite have control over or know what to do with - scary stalkers who you can never please. They want these people gone and put in their place an ocean of nufans that is a mile wide and an inch deep.

I don't know about the rest of y'all, but I survived 2 Ewok movies, an Ewok cartoon, a Droids cartoon, the Marvel comic with the green rabbit, C3P0 having his own cereal, the Prequels, a Jar Jar toy with a candy tongue that you were supposed to french kiss, the Timothy Zhan novels, porn parodies, dozens of video games, and the fucking Sequels and I still love Star Wars. This franchise can't alienate me. I will always love Episodes 4 - 6, nothing will change that. And I will remain every hopeful with each new property that it won't suck. But I'm pretty used to it sucking.

People asked the same question in the wake of the prequels. It's a combination of things. Easy nostalgia-button pushing, for one thing. But Star Wars is a big setting with a lot of room to navigate around blunders, and a lot of people want to like Star Wars. Lucasfilm seem incapable of making much of the potential in any sustained way, though.
