if only just mere grading was the issue of todays films, I'd be ecstatic

Digital has been a disaster all-around. Even people like Deakins couldn't make it work compared to film, let alone these amateurs that set white balance like a kid with his new DSLR camera.

I don't understand why they do it.

its weird how studios have all this "new high technology" but they end up using it for a grey color scale...
meanwhile you watch old films with their old technology and its amazing how colorful they are

People actually had to know the craft when shooting a film back then. These days they count on post-production. Also has to do with the fact that digital won't supercede film for who knows how long. The dynamic range of digital is weak, and they don't know how to light a scene. Check out what an embarrassment occurred in that battle episode from the last Game of Thrones season, where viewers couldn't see anything on the screen.
