They have queens to produce young, but they are rare. Goa'uld are not mammals, so I don't think a queen is quite the same as a female, although they generally do take female hosts.
The non-queens are seen taking both male and female hosts and they generally have a preference for one or the other. Osiris usually goes for male hosts, but he had to take Sarah Gardner in an emergency. That's why they were surprised by his appearance.

I honestly loved Daniel's progression from full on pacifist nerd simp to self-aware action scientist Jesus. It felt like after a while he'd just seen and done so much that he stopped giving a fuck and just started rolling with whatever happened. That and Jack's influence on him probably didn't help.
