Why is the Empire so cartoonishly evil post ROTJ? Everything they do after ROTJ makes no sense. Its especially jarring considering that Disney was trying to give them a more nuanced look

I always thought that an interesting route Disney could have taken with New Republic vs. Empire is have the galaxy split between the 2 and a cold war develop between them. New Republic could be analgous to Democratic Nations such as NATO while Empire is analgous to the USSR being an autocratic dictatorship. Both are equal in strength but aren't powerful enough to overtake the other. Both sides have their fair share of pros and cons. But I feel like it maybe too derivative of SWTOR and I'm not sure if that would mesh well with "Bringing balance to the force" theme the OT had. I imagine something like LOTGH meets Star Wars

Just give it the angle of how easy it is to rebel and fight for freedom and how hard it is to actually create a functioning government.

A few times in Mando or Book of Boba Fett there's been stormtrooper helmets impaled on spears.

You could do an interesting exploration about the dangers of state power as Thrawn makes alliances with more sinister elements to attain the power he needs to conquer the galaxy.
