Why does all of Spain's colonies have more distinct food than Spain itself? Outside of jamon and paella I'm not sure I could name a ton of Spanish dishes, but I know about tacos/enchiladas/taquitos/quesadillas/mole/guacamole/fajitas/etc. I guess "Tapas" is Spanish, but that's more of the style of eating than the food itself.

That's true. The US is about half Latino. But a lot of them barely speak Spanish, if they do at all

today i learnt brazilians dont know what latino means, or cope really hard not to be included in that group for some reason
thats because you know nothing about spain cuisine, but you live next to mexico so you know way more about theirs
theres some overlap that we have with portugal, france, and even italy, but we do have tons of dishes and a lot of different styles across regions
also tapas arent an specific food, but just a way of serving snacks and appetizers
