Spanish cuisine is too big and diverse to answer your question, each region has different cuisine. Paella is tourist bait and outside of the mediterranean coast is not eaten. I can name you some dishes of where i'm from (Catalonia): crema catalana, pa amb tomaquet, calçots, panellets, canelons, escalivada, botifarra, suquet de peix, escudella, coca, snails.
