I think all the Ed's were supposed to be younger but at some point decided to make them around 5th to 6th grade after the pilot.
Alternatively, maybe he just didn't like the idea of the two being a item but didn't want to redo the pilot. Spongebob had a similiar situation where intitially Spongebob and Sandy were meant to be a couple but they decided to drop the idea but still kept most of the script/episode ideas and simply reowrked them a bit.
