I've actually watched some Fat Albert and it really is dull as hell. It probably only has the relevance it has BECAUSE of Bill Cosby.

Why would you think that? Scooby Doo was way bigger in its own era. ...And pretty much every era.
It's a 70s cartoon. Don't expect it to be facemelting. It's hard to say if the endorsement actually mattered, because so many cartoons and TV shows from that era had a similar gimmick.
