Batman: Black and White is a great anthology with authors of high caliber, a must have.
Batman: Prey, one of my favourite Batman comics of all time done by Doug Moench and Paul Gulacy

Read all of Batman Legends of the Dark Knight

Batman Adventures is pound for pound the best sustained run of Batman comics, not to mention the most accessible
Also recommend The Greatest Joker Stories Ever Told for a nice overview of different eras

Batman the Golden Age Omnibus Vol 1

What Batman do you like OP? If you want street crime Batman than I recommend Batman: Broken City. Mediocre story, can't even remember how it ended but Eduardo Risso's art is why I recommend it.

If you want to understand the Batman mythos then check out Paul Dini's Dark Knight: A True Batman Story. It is about the real life experience Paul had of being mugged and beaten, each of the Batman characters represent a state of mind Paul went through. Heads up, it does not have action typical of superhero stories since its dialogue driven. Risso drew it so that's a bonus.

There's Morrison's Black Glove arc and Arkham Asylum. I like the former since it has the goofy silver age nonsense Batman went through and that I now love.

I actually prefer Batman stories where he interacts with Superman. So I recommend Jeph Loeb's Superman and Batman run. I think Public Enemies was the first arc.

Good stuff. I need to check out Batman Prey and Faces.

Batman Year One would've been a lot better in black and white. The coloring was pretty weak.

I like Bob Haney’s Bronze Age Brave and the Bold stuff, but that’s everyone but Superman.

That's a hot take.
It was colored two different ways by the same original colorist.

70's Batman. Anyone saying stupid shit like Long Halloween or various graphic novels isn't an actual fan of Batman. Nothing after like 2003 is worth reading Batman. His most iconic stories all happen from the 70's thru the early 90's. Most of 70's Batman is stand alone issues featuring Batman in horror settings solving crimes.

Detective Comics 434 thru 435- First Spook story
Detectives 469 thru 479- This is one of the most famous runs, covering stories such as the Joker Fish and Clayface III. The first two issues in this run are a bit bland, but everything after is some of the best Bat books and brings back Hugo Strange. Several BTAS episodes were inspired by this.
Batman 222- Fun story based on the Beetles, "Paul is dead," myth.
Batman 236- Batman solves a decades old unsolved murder
Batman 239- Famous Christmas story
Batman 252- Another Spook story
Batman 291 thru 294-One of the more famous stories
Batman 237- First Reaper story.
