Use your imagination, you can compose anything if you can play what you can imagine

play around with the rhythm of the melody. It depends on the style but adding syncopation, or just anything that isn't basic downbeats can liven up your melody even if the pitches you chose are not that adventurous.

also one thing that really works is just picking an arpeggio and moving from the root, to third, to fifth, to third, back to fifth, to root, back to third, back to root through the non-chord tones. basically using your 4ths, 2nds, 6ths and 7ths to get from one tone to the other, and the tones are where you "rest" the melody for a while.

melody crafting is actually the one aspect of music making that doesn't really improve with practice. In other words, you need to be innately talented at music to make good melodies

Having an immaculate knowledge of music usually harms your ability to make music that doesn't sound like a product. Music made by people who rely on theory sounds like something that was purposefully invented rather than an actual feeling that occurred naturally. It has a phony, almost uncanny before and aftertaste.

Listen to a lot of classical music, then try to recreate that. Also listen to a lot of pop music, the good kind.
Try to make it sound memorable.
