comparing sylenth with a real Moog, I hear a more dense sound from the Moog, and just an overall richness.

It's because they ara harder to obtain and master. Soft synths can be programmed by any random idiot from bandcamp or soundcloud, so in the consequence it creates inflation of shitty below mid-tier music you are being exposed to. When you hear or watching someone doing stuff with analog, you just know he's dedicated and chances are way more high he knows his shit. The entry treshold is incomparable and any monkey can easily produce something with DAW, which devaluates the overall quality.
