Depends what you mean by folk. These French Candian fellas have put on my favourite live gigs of all time, with higher energy than your average rock show.

Folk music as a phenomenon is extremely interesting. Appalachian folk is often extremely beatiful.
The older you go the less diatonic the music gets, and you have some seriously primordial old time songs that can be played with one or two "chords."
If you like technical music you will probably find the harmonies too simple tp be interesting but I think anyone who really listens closely will discover strands of ancient Celtic music and African folk music "sophisticated" in perhaps the same sense as modal jazz.
There are some truly virtuoso musicians in the bluegrass scene. The best part is the combination of instrument playing and singing, which you don't find in classical at all and rarely in jazz.
A four piece band with tight harmonies will move your soul and feet.
