Maybe first pick a server language. I chose Golang because it's easy and has good standard libraries as well as third party libraries.
Then learn about database and security.
Try looking up roadmap.sh, it has a detailed roadmap for backend.

our CS program was more programming than theory

Honest piece of advice is go to college, dont fall for the self learn meme

Not to mention the theory is typically useful. The difference in code quality between people who took a simple design patterns course vs not is astounding.

This is the biggest benefit of college desu. Code design rather than the actual logic part.

It might be a better idea to take a mix of classes at a local community college but also to take online classes, especially the high quality free courses from MIT and Standford. That way you could have some real life people to help with programing struggles but you would avoid having to go to college for 4 years and study a lot of unnecessary subjects.
