Because there are a set number of characteristics that both metroid and castlevania share which are mostly coincidental but were since copied by other games. It refers to those characteristics. Adventure platformer means nothing and explains nothing. Metroidvania tells you everything at once "games that do the things both those two games did? Ok."

I believe you mean Hollowlikes, as that is the term given to games that try to be like the extremely popular Hollow Knight.

There's platforming in all of these "metroidvania" style games because maps have exits from the top of the screen and the bottom, you're always climbing on platforms. Unless you're playing some kind of top down metroidvania, which should probably have a different name.
