Controller of time is a lot more vague of a role than defender of earth. There havent been many threats to time itself, and legends is proof that it does do its job

Dialga embodies time, it's not necessarily a guardian.
If something messes up time, Dialga is more likely to be affected too and not in any capacity to fix it.

I mean he's originally a giant. He falls both in Alola and Kalos, from space. Meaning that if he reunited all the pieces he would be gigantic

Canon reason is that the player character always saves the day before Zygarde can even fully assemble

Zygarde's relation to Kalos is never fully elaborated upon, they killed Pokemon Z, or XY2 or whatever it was supposed to be.

The SM Pokedex calls it stronger than Xerneas/Yveltal, but we never actually see this take place in the story. Unlike say Rayquaza, which appears to stop Kyogre/Groudon in Emerald and has an in-battle ability that corresponds to its legend (Air Lock cancels out weather abilities). Aura Break exists, but Zygarde loses that when it transforms sadly.

Zygarde is in an interesting position.
Since precious little media EVER elaborated on its relationship to Xerneas and Yveltal, it's been softly retconned out of the trio.
GF and TPC have done everything in their power to bury Aura Break and hype up Power Construct instead. Zygarde has stood on its own for two generations now.
Factoring in its place in Alola, which (1) further removes it from Xerneas/Yveltal and (2) juxtaposes it as a force of Earth vs. Solgaleo's Sun and Lunala's Moon, it's clear that Zygarde's role has changed over time.
USUM really should have done more to involve Zygarde against Necrozma or the UBs. That I think was their last chance to capitalize on its assload of "suppress those who endanger the ecosystem" flavor."

You’re talking out of your ass. Zygarde’s last appearance in the anime explicitly stated what its relationship to the trio was, and the very next game added on to that.
