Because so much value and security now hinges on a single central protocol, if a vulnerability is discovered, a blackhat could ultimately destroy the entire crypto economy across all chains. Regardless of node quality or how heavily audited the contracts are, the world of cross chain contracts is ripe for unexpected exploits. Chainlink is really crypto's biggest threat.

Code is constantly being updated, both on smart contract platforms (ETH, ...) and the secondary layers that write to them (Chainlink, ...).
People are upgrading to new contracts after such changes all the time.
