A simple trade is easy, you just need to determine relative value of the goods to each other. Of course this varies by place, time of year, and recent events. A bountiful harvest will lower the price of grain and you'll only need to sell a small amount of stone. A famine may make food items unavailable altogether, but you can sell it to the village at a premium. The total value of your stones won't necessarily equate to a full wagon of barley depending on circumstances.

Then you probably just don't understand how the plot even affects the characters themselves, or what the character's motivations are (MCs in particular).
Try to see the unraveling events with their frame of mind, and then you'll understand why each acts in the way they do; the series insn't just banter between the MCs and economics really.

The adaptation did its best to not make Holo and Lawrence look like a pair of Wall Street sociopaths swindling Amarty out of his hard-earned money. That's how they are consistently portrayed in the novels. Like, Lawrence's inner monologue regarding Nora is non-stop "act cool and manipulative this dumb naive bitch into taking a job where she gets all the risk and I get all the profit."

She is high maintenance but look at the benefits of the relationship. Plus she is right pretty much always when Lawrence fucked up some how so I feel its usually justified. I dont feel that makes her a bitch. Also you might mistake some of the teasing/flirting as bitchiness
