Basically, one studio hears about another studios' plans and tries to beat them to the theater with their own version of the same idea.

The "two-part movies" is one. After Harry Potter split the 7th book into 2 movies, everyone started adding Part 1 and Part 2 to their grand finales. Hunger Games, Divergent, Avengers and Justice League (but the last two changed - Marvel just gave the movies different titles and Justice League ditched Part 2 completely).

But what causes this? Industrial espionage?

This is actually a pretty good example, I mean both are trying to cash in on Game of Thrones success so it makes sense but the fact they started coming out literally the same week, that's weird.

That, but it's mostly studio executives who can't keep their mouths shut.

All it takes is one to say "We're making a movie about this great idea!" and everyone at the party goes back to their studios and tries to rush out the same idea.
