Anglo americans had (and still have) a very simplistic binary conception of race and social class compared to the tiered caste systems of Spanish and French colonies. When the burgers started moving in they replaced those old ways with the binary. One drop rule made mestizos and creoles fully black/brown in the eyes of the law. You still see remnants of that even today in the way biracial Americans identify more with their black side than their white side.
